In the Kitchen with Jason: October Feast Casserole

This is one of the tastiest dishes we've ever had, and it's quickly become a staple meal in our home. The recipe comes to us courtesy of my Grandma Dorothy - thanks, Grandma!

  • 4 medium potatoes, cooked
  • One onion, chopped
  • 1/4 cup butter
  • 1/4 cup plus 2 Tbsp flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon, thyme
  • 2 cups milk
  • 1/2 pound smoked sausage, thinly sliced
  • 2 cups frozen peas, rinsed and drained
  1. Slice potatoes.
  2. Cook onion in butter until tender.
  3. Blend in flour and seasonings. Gradually add milk, stirring until smooth.
  4. Cook, stirring constantly, until mixture is slightly thickened.
  5. Place half of sausage in bottom of 2 quart casserole.
  6. Add half of potatoes, half of peas and half of sauce. Repeat layers with remaining ingredients, ending with sauce.
  7. Bake at 350 degrees for 30 minutes.
