In the Kitchen with Jason: Cornbread Muffins

Boy oh boy, do we like cornbread. And now we found a recipe to make it into nifty single serving muffins. Input eating way too many here. We made a bunch of these for a family gathering and they went over fantastically. We found this recipe in the Eat What You Love cookbook.

  • 1 egg
  • 2 egg whites
  • 3 Tbsp melted butter
  • 1 1/4 cup buttermilk
  • 1 tsp vanilla
  • 1 cup cornmeal
  • 1/2 cup whole wheat flour
  • 1/2 cup flour
  • 1/2 cup granulated sweetener
    • If you want, you can use real sugar instead.
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • Preheat your oven to 375 degrees.
  • Prepare a muffin pan by spraying it with cooking spray.
  • Mix together the egg, egg whites, butter, buttermilk and vanilla.
  • In a different bowl, mix the remaining ingredients.
  • Pour the wet ingredients into the bowl with the dry ingredients.
  • Stir just until it is good and mixed.
  • Evenly divide the batter into the prepared muffin pan.
  • Bake for 13 minutes.
  • Don't burn your mouth eating them fresh from the oven.
Trust me on this one, you will love them.
