In the Kitchen with Jason: Oatmeal Chocolate Chip Cookies

These are not your usual oatmeal cookies. The oatmeal is almost hidden in these gems which makes for a pleasant change from the overabundance of too-much-oatmeal cookies that are out there.We found this recipe in the Cook This, Not That Comfort Foods cookbook.

  • 1 cup flour
  • 1 cup rolled oats
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup butter, softened
  • 1 large egg
  • 1 tsp vanilla
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup dark chocolate chips {or as a fun alternative, use M&M minis instead!}
  • Preheat oven to 375 degrees.
  • Combine the first 5 ingredients in a bowl and set aside.
  • Put the remaining non-chocolate ingredients in a bowl and mix together with an electric mixer.
  • Pour the flour/oats mixture into the creamed butter/sugar mixture and mix again.
  • Fold in the chocolate chips.
  • Spray a cookie sheet with cooking spray.
  • Drop about 2 tablespoons of dough onto the cookie sheet about 2 inches apart.
    • Will make about 16
  • Bake for 12 to 14 minutes.
  • Cool for 5 minutes on the cookie sheet before removing to a wire rack to cool.
    • Instead of cooling further on a wire rack, you could eat them right then.
