In the Kitchen with Jason: Banana Muffins

These muffins are quite possibly the best banana muffins I have ever had the pleasure of eating. They are everything that you could want in a banana muffin, and they are slightly over-the-top large which just make them fantastic fun. The original recipe can be found here.

  • 4 bananas, smashed and divided {if you have only 3, that works fine too}
  • 1 cup sugar
  • 3/4 cup butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • Preheat your oven to 350 degrees.
  • Put half of the bananas in a mixing bowl along with the sugars.
  • Blend with a mixer for 3 minutes.
  • Add in the butter, eggs, and vanilla and mix again.
  • Add the flour, other half of bananas, baking soda and salt and mix just until combined.
    • Do not over mix.
  • Scoop into greased muffin tins.
    • As noted earlier, they will be very full.
  • Bake for 20 minutes.
