In the Kitchen with Jason: Cake on the Beach (otherwise known as Deliciousness in a Ramekin)

So this is one of the first "diet" recipes Jess or I ever made. And it is the most delicious snack ever invented. At least that is what Jess tells me. She always eats them before I have a chance to try them (and that's an completely false statement, I usually end up getting one out of every two batches we make). This recipe can be found in the Hungry Girl 1, 2, 3 cookbook.

Behold! The picture that makes this awesome snack look like tapioca pudding!

Ingredients
  • 1/2 cup yellow cake mix
  • 1/4 cup vanilla yogurt (if you make homemade plain yogurt, mix in a bit of vanilla flavoring or extract to make it vanilla-flavored)
  • 1 Tbsp water
  • 1/4 cup canned crushed pineapple (do not drain)
  • 1 sugar-free vanilla pudding snack
  • 3 tsp shredded sweetened coconut
Directions
  • Mix first three ingredients.
  • Divide into three microwave safe bowls, sprayed with cooking spray.
    • We use ramekins (thus the alternate name).
  • Cook each ramekin of batter individually on high for 45 seconds in the microwave.
  • Go do something else for five minutes.
  • Come back with a toothpick and stab each of the rame-cakes five or six times.
  • Put a third of the 1/4 cup pineapple into each of the three bowls.
  • Spread 1/3 of the pudding snack over the pineapple in each bowl.
  • Cover with plastic wrap and place in the fridge.
  • For the next hour do one of the following:
    • Nap
    • Exercise
    • Read a good book
    • File your taxes
    • Dust the living room
    • Spend time with your kids
    • Contemplate existence
    • Read more of our blog
    • Clean your kitchen
    • Like our Facebook page
    • Something other than what I have already suggested
  • After an hour is up, remove the plastic wrap and sprinkle 1 tsp of coconut over each cake.
  • Try not to eat all of them in one sitting.
If you haven't noticed, these little guys put me in a good mood. If you use fat free yogurt and sugar free pudding, each cake only has 136 calories.
