In the Kitchen With Jason: Easy Ravioli Bake

Ingredients
  • 1 chopped onion
  • 1 chopped green bell pepper
  • 1/2 tsp dried oregano
  • 4 minced garlic cloves
  • 6 Tbsp tomato paste
  • 1/4 Cup water
  • 1/2 tsp basil
  • 1/4 tsp crushed red pepper
  • 1/8 tsp black pepper
  • 2 cans diced tomatoes
  • 1 package (24 oz) ravioli
  • 1/2 cup (2 oz) shredded mozzarella cheese
Directions
  • Preheat oven to 400 degrees.
  • Heat a large sauce pan over medium-high heat.
  • Coat the pan with cooking spray.
  • Add onion, bell pepper, oregano, and garlic.
  • Saute until vegetables are tender, about 5 minutes.
  • Add tomato paste, water, basil, crushed red pepper, black pepper, and tomatoes.
  • Stir to combine and bring to a boil.
  • Reduce heat to medium-low and simmer for 20 minutes, stirring frequently.
  • Remove from heat.
  • Stir in ravioli.
  • Pour into a 9x13 baking dish.
  • Sprinkle evenly with cheese.
  • Bake for 30 minutes.
  • Makes 6 servings.
We got this recipe from Cooking Light Complete Cookbook. Though it did get modified a little to fit our personal tastes (and the larger bag of ravioli, which is the only type of ravioli sold in either Wal-Mart or Meijer in Flint).
