This is a simple and easy side to throw together and have whenever you want some delicious red taters with your dinner.
- 2 lbs red potatoes, cut into wedges
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 Tbsp butter
- 1/2 tsp thyme
- Preheat oven to 450.
- Mix potatoes with EVOO, garlic, salt and pepper.
- Put in a baking dish and bake for 35 minutes.
- Once the potatoes come out of the oven, mix them with the butter and thyme.
